Do you really have to start chess at 5 years old to become a GM?

You do not need to start at age of 5 to become GM. If you will start at age of 18, it will be probably impossible to motivate yourself on sitting day and night looking at wooden board, when there is so much more things to do at that age in the world... like, why would you do that...
If you want to start at age 30, that will be surely impossible to find motivation, again, because there are so many more interesting things to do, learn, read, etc.... rather than sitting looking into that wooden board and dreaming that FIDE one day will give you that superb title...
Some start before the age of 7 and others peak at their prime years. Don't forget their are late bloomers.

I started when I was 5(10 years ago) but I never stuck to chess until the pandemic. During these 4 years I did everything and I can now win 2000 fide rated players. When I started again playing otb after the pandemic my fide rating was 1072 and now I can win 2000+ players and I am increasing my rating.I hope I reach 2000 before I turn to an adult(just for fun)

WOW nice. even still I'm only rated FIDE 1122 after doing chess for 8 years!! Sorry 1473 now after new adjustments.
Are you talking about beating players who are rated 2000 FIDE online or OTB?

I think you're talking about beating 2000 FIDE players online because you only have bullet for a reasonable rating.
It has nothing to do with motivation. Starting as an adult your main enemy is the biology.
