That's pretty much how eels and some squid are prepared. I once asked a chef how they tenderized their squid and he refused to tell me.
(They put a bunch of them in a large bucket with salt. The salt tears their skin, so they keep squirming in pain, and by squirming they tear open the skins of the other eels, who then also keep squirming. After a couple of hours of exhaustion, their muscles are full of lactic acid, which tenderizes the meat. Can you provide some source? Quick google search didn't find anything like that only that lactic acid makes meat stiff faster so it doesn't sound right.
edit: actually I found both that lactic acid makes meat tougher and that it's used for tenderizing so I've got no idea what it actually does
